How to lay out the answer. Follow the frame, then write it in your own words.
1 · Open in two lines. Commercial establishments prepare and serve food for profit. Restaurants and hotels form the largest part of the general market.
2 · Draw a classification chart. [Chart: Commercial → General market (hotels, restaurants, cafes, dhabas) and Restricted market (transport catering, clubs)]
3 · Types of restaurants.
Fine dining, casual or family, multi-cuisine.
Speciality or ethnic, quick service, coffee shop.
Cafeteria, theme restaurant, dhaba, food court and kiosks.
4 · Star classification of hotels. Ministry of Tourism through HRACC: one to five star, five star deluxe and heritage hotels.
5 · Other bases of classification. Location, size, length of stay, ownership, level of service and theme, with one example each.
6 · In a real kitchen. The outlet type decides the menu, equipment, staff skills and space per cover.
7 · Close in one line. Each type serves a different customer need, so planning starts by knowing the market.
Scoring tip: Use a table with three columns (type, features, example) for restaurants; it is quicker to write and easier to mark.
