Define catering equipment. Classify it and explain the factors affecting its selection.
How to lay out the answer. Follow the frame, then write it in your own words.
1 · Open in two lines. Catering equipment means the machines, tools, utensils and furnishings used to store, prepare, cook, serve and clean up food. It is a large, long-term investment.
2 · Draw a classification chart. [Chart: Equipment → by work area, by size (major, minor), by power (electrical, non-electrical), by mobility (fixed, mobile), by function]
3 · Explain each basis with examples. Work area, size, power source, mobility, function.
4 · Factors in selection.
Need, total cost, performance and capacity.
Design and ease of cleaning, safety, size and space.
Utilities, energy efficiency, standards, after-sales service.
5 · Materials in brief. Stainless steel, aluminium, cast iron, copper, plastics; insulators such as PUF and glass wool.
6 · In a real kitchen. A South Indian hostel needs wet grinders and steamers; acidic dishes need stainless steel, not aluminium.
7 · Close in one line. Equipment chosen for the menu and its whole-life cost serves well for years.
Scoring tip: Stress total cost (not just price) and ease of cleaning; examiners look for both.
