Explain the receiving process and the standard practices for receiving and inspecting food supplies.
How to lay out the answer. Follow the frame, then write it in your own words.
1 · Open in two lines. Receiving is the control point where goods delivered are checked for quantity, quality and price before they are accepted. Errors here pass straight into the kitchen.
2 · Functions.
Check quantity, quality and price.
Accept or reject; record.
Move goods promptly to storage.
3 · Draw the receiving flow. [Flow: prepare → check against purchase order → inspect quality and temperature → check invoice → accept or reject (credit memo) → tag and date → store → record]
4 · Methods of receiving. Invoice receiving (quick) and blind receiving (accurate).
5 · Inspection of supplies. Frozen hard at −18°C; chilled at 5°C or below; reject swollen cans, cracked eggs, damp or infested sacks, wilted produce.
6 · Standard practices. Clean area with scales and thermometer; fixed delivery hours; trained receiver separate from buyer; weigh without packing; never leave goods unattended.
7 · In food service. Rejecting warm chicken at a hospital receiving bay protects vulnerable patients.
8 · Close in one line. Careful receiving ensures the unit pays only for safe goods of the right quality and quantity.
Scoring tip: Name both receiving methods and give at least four accept/reject points with temperatures; these are what examiners look for.
