Effective use of leftover food sheet
5-mark answer frame

How can leftover food be used effectively and safely in a food service unit?

How to lay out the answer. Follow the frame, then write it in your own words.

  1. 1 · Open in two lines. Leftovers are cooked food not served or not eaten. They waste money and can be unsafe, so they must be prevented, and safe ones reused wisely.
  2. 2 · Causes and prevention.
    • Wrong forecast, over-production, poor portioning, unpopular dishes.
    • Prevent by forecasting, standard recipes, portion control and batch cooking.
  3. 3 · Make a table of new dishes. [Table: rice → lemon rice; chapati → chapati upma; idli → idli upma; dal → dal paratha; bread → bread pudding]
  4. 4 · Safe handling. Cool within 2 hours in shallow trays, cover and label, refrigerate at 5°C or below, use within a day, reheat once; discard plate waste.
  5. 5 · In food service. A hostel turns leftover idlis into evening idli upma, but cools leftover rice fast because of Bacillus cereus.
  6. 6 · Sharing and composting. Safe surplus to registered food-recovery agencies; the rest composted.
  7. 7 · Close in one line. Prevent first, reuse safely, and when in doubt throw it out.

Scoring tip: Balance the answer: prevention, creative reuse and food safety each deserve a few lines.
