Changes during freezing, frozen storage and thawing

Freezing is not perfect: ice crystals, drip, freezer burn and rancidity can spoil quality. Good packing, a steady −18 °C and safe thawing limit the damage.

Freezer burnDry, greyish-brown patches from ice subliming off the surface
Volume riseWater expands about 9% when it freezes
Safe thawingIn the fridge, under cold running water in a sealed pack, or in a microwave

Changes during freezing and frozen storage

ChangeCausePrevention
Ice crystal damage and drip lossLarge crystals break cells; on thawing, juice with soluble vitamins, minerals and protein leaks outQuick freezing; steady storage temperature
Freezer burnIce sublimes from unprotected surfaces, leaving dry, spongy, discoloured patchesAirtight, moisture-proof packs; glazing fish with a thin ice coat
RecrystallisationTemperature swings let small crystals melt and re-form as large ones (gritty ice cream)Steady −18 °C or colder; open the freezer less
Protein denaturationConcentrated salts in the unfrozen water toughen proteins (dry, tough fish)Quick freezing; low storage temperature
Fat oxidation (rancidity)Oxygen still reacts slowly, especially in fatty fish and meatVacuum packs, glazing, antioxidants
Colour and flavour changesEnzymes not destroyed: browning of fruit, hay-like flavour in unblanched vegetablesBlanch vegetables; sugar, syrup or ascorbic acid for fruit
ExpansionWater expands about 9% on freezing; containers crack or bulgeLeave headspace
Emulsion and starch changesGravies and custards separate; curd and boiled potato turn spongyChoose suitable recipes; add stabilisers

What happens to microbes

Freezing kills some microbes, during freezing and over long storage, but many survive, including pathogens and spores. Thawed food therefore carries live microbes, and its damaged cells and drip make it spoil faster than fresh food. Viruses and bacterial toxins already present are not destroyed.

Safe thawing

  1. 1
    Thaw in the refrigerator
slowest but safest; plan a day ahead
  2. 2
Or keep the sealed pack under cold running water
    change the water often
  3. 3
Or use the microwave defrost setting and cook at once
  4. 4
Cook small vegetables straight from frozen
peas and mixed vegetables need no thawing
  5. 5★
Never thaw meat or fish at room temperature for hours
the surface reaches the danger zone
  6. 6★
Do not refreeze thawed raw food unless it is cooked first

★ one-way, controls the pace

Advantages and limitations of freezing

AdvantagesKeeps food for months with colour, flavour and most nutrients close to fresh; stops microbial growth; makes seasonal foods (peas, mango pulp, prawns) available all year; convenient ready meals; little or no preservative.
LimitationsCostly: needs freezers and an unbroken cold chain, which is weak in rural India; power cuts ruin stock; does not kill all microbes; texture changes (drip, sponginess) in some foods; freezer burn and rancidity; thawing needs time and care.
In food and nutrition

Drip from thawed meat and fruit carries water-soluble vitamins, minerals and protein; cook frozen vegetables straight from the pack and use thawing juices in gravies. In institutional kitchens, date every pack, rotate stock and never refreeze thawed raw food.

Exam angle

2 marks: “What is freezer burn?” Dry, discoloured, spongy patches on frozen food caused by ice subliming from unprotected surfaces; prevented by airtight, moisture-proof packing or glazing.

5 marks: “Explain the changes that occur in foods during freezing and frozen storage.” Ice crystal damage and drip, freezer burn, recrystallisation, protein denaturation, rancidity, colour and flavour changes, expansion, emulsion breakdown; prevention for each.

5 marks: “Give the advantages and limitations of freezing.” Advantages: long keeping, near-fresh quality and nutrients, seasonal foods all year, convenience. Limitations: cost, cold chain, microbes survive, texture changes, freezer burn, careful thawing.

Remember it

Drip, Burn, Grit, Rancid, Tough: five freezer faults. Fix them with quick freezing, tight packs and a steady −18 °C.
