Outdoor and contract catering, franchising and food delivery apps
Outdoor caterers serve at the client's venue, contract caterers run another organisation's kitchen, franchisees rent a brand, and delivery apps link customer, restaurant and rider.
Outdoor catering, contract catering and franchising
| Point | Outdoor catering | Contract catering | Franchising |
|---|---|---|---|
| Meaning | Food prepared and served away from the caterer's base, at the client's venue | An organisation hands its food service to a specialist caterer under a written contract | The brand owner (franchisor) lets another business (franchisee) use its name, recipes and system |
| How it works | Plan menu with client; cook at base or on site; carry food in insulated containers; set up counters; clear up | Contract fixes menu, quality, hygiene, price per head or management fee, and duration | Franchisee invests and runs the outlet; pays a fee and a royalty; follows the franchisor's standards and buys set supplies |
| Indian example | Weddings, college fests, conferences | IT company cafeterias, hospital and college messes, railway catering licensees | Pizza, burger, ice-cream, tea and biryani chains |
| Plus | Large orders; variety of events | Expertise; the institution is free of daily kitchen work; predictable cost | Proven brand and training for the franchisee; fast growth for the franchisor |
| Minus | Transport, weather, temporary kitchens, food safety risk | Profit motive can cut quality; less control; disputes over terms | Fees and royalty; little freedom; one bad outlet hurts the whole brand |
Essential features of a food delivery app

- Payments: UPI, cards, wallets and cash on delivery.
- Real-time tracking of the order and rider, with an estimated delivery time.
- Ratings and reviews, photos, and offers or coupons.
- Order history and quick reorder; chat or call support; notifications.
- Restaurant side: dashboard to accept orders, update menus and stock, and see sales reports.
- Rider side: map routes, pick-up and drop alerts, earnings record.
- Food safety information: the restaurant's FSSAI licence or registration number and hygiene details.
Advantages and drawbacks of food delivery apps
Cloud kitchens
A cloud kitchen (dark or ghost kitchen) cooks only for delivery orders and has no dining area. One kitchen can run several brands (biryani, rolls, desserts) from the same staff and equipment. Rent and staff costs are low, but the business depends fully on apps, packaging and ratings.
For a delivered meal the kitchen's job does not end at the pass: it must choose packaging that keeps food hot and intact, plan dishes that travel well, and display allergen and veg/non-veg information clearly.
2 marks: “What is contract catering?” An arrangement in which an organisation hands its food service to a specialist caterer under a written contract that fixes menu, standards and price.
5 marks: “Write short notes on outdoor catering and franchising.” Outdoor: meaning, steps (plan, cook, transport, set up, clear), examples, problems. Franchising: franchisor and franchisee, fee and royalty, advantages and drawbacks.
10 marks: “Discuss the essential features, advantages and drawbacks of food delivery apps.” Define; features for customer, restaurant and rider; advantages for each party; drawbacks (commission, quality, packaging, safety, health, riders); add cloud kitchens; conclude.
Outdoor = their venue; Contract = their kitchen; Franchise = our brand; App = the bridge.
