Dishwashing: the manual three-sink method

  1. 1
Scrape and sort: remove food into the bin; sort plates, glasses and cutlery.
  2. 2
    Pre-rinse to remove loose soil.
  3. 3
Wash in sink 1 in hot water with detergent, using a brush or scrubber.
  4. 4
Rinse in sink 2 in clean hot water to remove detergent.
  5. 5★
Sanitise in sink 3: very hot water or a chemical sanitiser such as a chlorine solution, for the time stated.
  6. 6
Air-dry on racks; never wipe with a cloth, which can recontaminate.
  7. 7
Store clean, inverted and covered, away from dust and splashes.

★ one-way, controls the pace

Manual and mechanical dishwashing

ManualThree sinks and racks. Low cost, suits pots, pans and small units. Labour-intensive; water temperature and sanitising may not be uniform.
MechanicalDoor-type (single tank) for small units; rack conveyor for larger ones; flight-type (dishes on a moving conveyor) for very large units. Uniform washing and a hot final rinse; saves labour. Costly; needs power, water, trained staff and maintenance.

Waste disposal

  • Segregate at source into wet (food) waste, dry waste (paper, plastic, cans, glass), sanitary waste and special-care (hazardous) waste, the four streams of the Solid Waste Management Rules 2026; colour-coded bins (commonly green for wet, blue for dry).
  • Bins with foot-operated lids, lined, emptied often and washed daily.
  • A separate, covered garbage area away from food, with a washable floor and drain.
  • Wet waste: composting, biogas, or a food-waste pulper or disposer where allowed.
  • Dry waste: send to recyclers; compactors reduce bulk.
  • Used cooking oil: never pour into drains; give to authorised collectors for biodiesel (FSSAI's RUCO initiative).
  • Reduce waste first: accurate forecasting, standard portions, FIFO storage, using trimmings.
In a real kitchen

A cracked plate or a cloth-wiped glass can carry germs to a patient in minutes; air-drying after sanitising breaks that chain. Weighing the plate waste each day shows which dishes students reject and guides the menu.

Exam angle

2 marks: “What is hollowware?” Metal tableware (silver-plated or stainless steel) that is hollow or holds liquid, such as teapots, coffee pots, jugs, sauce boats and bowls.

5 marks: “Describe the manual method of dishwashing.” Scrape and sort, pre-rinse, wash with detergent, rinse, sanitise with hot water or chlorine, air-dry, store covered; compare briefly with machines.

10 marks: “Describe the equipment used in the production and service areas of a food service establishment.” Kitchen equipment: cooking, processing, holding, cookware, hand tools (electrical and non-electrical); service equipment: furniture, linen, crockery, tableware, glassware, miscellaneous, disposables; dishwashing and waste disposal in brief.
